Ingredients

Ingredient Amount Notes
Butter 1/2 cup  
Sugar 3/4 cup  
Cornstarch 3 Tbsp  
Dry Mustard 3 tsp  
Egg 5 Yolks only
Half + Half 1 cup  
Vinegar 1 cup  
Salt 1 tsp  

Method

  1. Separate eggs and discard whites
  2. Beat egg yolks well
  3. Mix butter, sugar, cornstarch, mustard, and beaten egg yolks
  4. Cook in top of double boiler
  5. When it begins to thicken, stir in Half+Half and Vinegar
  6. Stir until very thic
  7. Remove from heat and cool
  8. Using an egg beater, beat in salt
  9. Beat until creamy

Notes

  • Store in an airtight container in refrigerator until used
  • Thin with sweet or sour cream is needed
