Ingredients

Ingredient Amount Notes
Eggplant 1 Pared - Sliced thin
Salt    
Pepper    
Cream 1 cup  
Butter large piece  
Flour a little  

Method

  1. Pare eggplant and slice it thin
  2. Add Salt and Pepper to taste
  3. Cover with water and boil for 1 hour, stirring frequently
  4. Drain well
  5. Add cream, a large piece of butter
  6. Bring to a boil
  7. When it reaches a boil, sift in a little flour to thicken

Notes

  • Do not cook in tin or iron as it will darken
