Eggplant | 1 | Pared - Sliced thin |
Salt | ||
Pepper | ||
Cream | 1 cup | |
Butter | large piece | |
Flour | a little |
Method
- Pare eggplant and slice it thin
- Add Salt and Pepper to taste
- Cover with water and boil for 1 hour, stirring frequently
- Drain well
- Add cream, a large piece of butter
- Bring to a boil
- When it reaches a boil, sift in a little flour to thicken
Notes
- Do not cook in tin or iron as it will darken
