Crisp Onion Rings

Sweet Onions | 3 or 4 | |
Flour | 1 cup | |
Baking Powder | 1 1/2 tsp | |
Salt | 1/2 tsp | |
Eggs | 1 | |
Water | 2/3 cup | |
Lemon Juice | 1/2 Tbsp | |
Butter | 1 Tbsp | Melted |
Method
- Peel onions
- Cut into 1/4 inch slices
- Separate into rings
- Sift together flour, baking powder, and salt
- Beat egg and add water and lemon juice
- Beat egg mixture until frothy
- Stir in dry ingredients to make a batter
- Melt butter and add to batter
- Heat frying fat to 375F
- Add all onion rings to batter at same time
- Stir until coated
- Sift out one by one
- Fry 2 minutes on each side
- Drain on paper towels
- Keep cooked onions warm in slow oven until all rings are fried
