Modern Notes

  • The recipe calls for 2 tsp “ascorbic acid mixture for fruit”. From googling Ascorbic Acid (aka Vitamin C) is sold as a powder. You are meant to combine 1 teaspoon of the powder with a full gallon of water to preserve fruit. It’s unclear to me if the 2 teaspoons means 2 teaspoons of the powder, or to mix the acid powder with the water and to use 2 teaspoons of the mixture? Making 2 gallons of mixture seems out of scale with the rest of the recipe. Maybe someone can try this and report back? – David S
