Ingredients

Ingredient Amount Notes
Squash 2 lbs  
Eggs 2 Beaten
Mayonnaise 1 cup Blue Ribbon Mayonnaise
Onion 1 Chopped fine
Green Pepper 1/4 cup Chopped Fine
Parmesan 1 cup  
Salt To Taste  
Pepper To Taste  
Butter    
Seasoned Bread Crumbs    

Method

  1. Preheat oven to 350F
  2. Butter baking dish
  3. Wash squash
  4. Cut into chunks
  5. Cook tender
  6. Drain
  7. Chop Onion and Green Pepper fine
  8. Beat eggs
  9. Add onion, Green Pepper, Mayonnaise, and Parmesan
  10. Add Salt and Pepper to taste
  11. Mix well
  12. Put into buttered baking dish
  13. Add seasoned bread crumbs
  14. Dot with Butter
  15. Bake for 30 minutes
