| Onion | ⅓ cup | Finely chopped |
| Dry Mustard | 2 tsp | |
| Mayonnaise | ||
| Flour | ||
| Bread Crumbs | Fine Dry Bread Crumbs |
Method
- Mix well
- Shape into cakes
- Roll cakes in flour
- Dip cakes into beaten eggs, then Bread Crumbs
- Fry in hot fat
- Drain on paper

Modern Notes
- The amount of eggs is unclear. It calls for “2 eggs beaten” to be included in the mixture, and also for dipping the mixture in “2 beaten eggs”. I would have 4 eggs on hand, but only beat 2 at first. Make the mixture without eggs, and add 2 eggs if it won’t hold together. Or you know, give it a try with 4 eggs? Let me know how it works either way. – David S
