Deviled Clams

Ingredients

| Clams | 2 cups | Finely minced |
| Onion | ½ cup | minced |
| Green Peppers | ⅓ cup | Chopped |
| Celery | ⅓ cup | Chopped |
| Bread Crumbs | 1⅓ cup | Dry Bread Crumbs |
| Heavy Cream | 1 cup | |
| Eggs | 2 | Beaten |
| Butter | 3 Tbsp | Melted |
| Prepared Mustard | 2 tsp | |
| Salt | 1½ tsp | |
| Pepper | 1 tsp | |
| Parmesan | Grated | |
| Bacon | ½ inch per clam |
Method
- Preheat oven to 350 °F
- Shuck clams, preserving shells
- Finely mince clams
- Mince onion and add to clams
- Chop Green Pepper and Celery and add to clams
- Add Bread crumbs
- Stir in heavy cream
- Beat eggs and stir in
- Melt butter and stir in
- Stir in mustard, salt and pepper
- Scoop mixture back into clam shells
- Bake 20 minutes
- Remove from oven
- Sprinkle heavily with Grated Parmesan
- Place ½ inch strip of bacon on top of each shell
- Heat until bacon is crisp
