Deviled Melbas

Ingredients

Deviled Ham | 1 can | Recipe calls for 4.5 oz can, but this seems to be sold in 4.25 oz cans in 2025. |
Egg | 1 | Raw - separate yolk from white |
Prepared Mustard | 1 tsp | |
Mayonnaise | 1/4 cup | |
Onion | Grated | |
Melba Rounds | ||
Grated Cheese |
Method
- Combine Deviled Ham, egg yolk, mustard, mayonnaise and a little onion
- Blend together
- Beat egg white to stiff peaks
- Fold egg white into ham mixture
- Spread ham mixture onto Melba rounds
- Sprinkle with a little grated cheese
- Broil 3 inches from heat until cheese bubbles
- Serve at once
Notes
- This can be put on party rye too. (See Modern Notes on Rye Niblets for explanation of what party rye.)
Modern Notes
- Melbas are a kind of twice-baked cracker made from thinly sliced bread. You can find them as rounds or as “toast” in a rectangular shape.
- Other recipes call for a 4.25 oz can of deviled ham so this may have been a mis-transcribed recipe in the original cookbook. – David S
