German Potato Salad

Ingredients

Bacon | 1/2 lb | |
Vinegar | 3/4 cup | |
Eggs | 2 | well beaten |
White Potatoes | 12 | |
Salt | To taste | |
Pepper | To Taste | |
Celery | Finely sliced | |
Celery Seed | ||
Onion | 1 large | cut very fine |
Method
- Cut Bacon into small pieces
- Fry slightly
- Stir in vinegar
- Beat egss well and add
- Let sit until mixture thickens
- Boil potatoes in salted water
- Let potatoes cool enough to handle
- Slice potatoes
- Add salt to taste and plenty of pepper
- Finely slice cleery and add to potatoes
- Slice onion very fine and add to potatoes
- Add bacon mixture
Notes
- Serve hot or cold
