Ingredients

For Dumplings

Flour 1 cup  
Baking Powder 1 tsp  
Salt 1/4 tsp  
Milk 1/2 cup  
Eggs 1 Lightly beaten

For Soup

Ingredient Amount Notes
Salt Pork 1/2 lb  
Potatoes   Raw - diced
Asparagus 1 1/2 cups cooked - keep liquid
Milk 1 quart Hot - not boiling

Method

  1. Cut Salt Pork into 1-inch cubes
  2. Cook salt pork for 45 minutes; prepare remaining ingredients while pork is cooking
  3. Cook Asparagus cuts and tips
  4. Drain asparagus preserving liquid
  5. Dice raw potatoes
  6. Lightly beat egg for dumplings
  7. Add 1/2 cup milk and dry dumpling ingredients to beaten egg
  8. Lightly mix dumpling batter with fork
  9. Once the salt pork is done cooking add potates and cooked asparagus
  10. Use the asparagus liquid to cover the pork, potatoes and asparagus
  11. Cook until potatoes are done
  12. Drop teaspoon-sized dumplings
  13. Cover and cook for 15 minutes
  14. Heat 1 quart of milk without brining it to a boil
  15. Add hot milk to soup and serve immediately
