Asparagus with Drawn Butter Sauce

Sugar | Pinch | |
Butter | 2 Tbsp | |
Flour | 1 Tbsp Flour | |
Milk | 1/2 cup | |
Salt | To Taste | |
Lemon | For serving |
Method
- Wash peel and cut up fresh asparagus
- Discard tough butts
- Boil in just enough water to cover
- When tender, lift asparagus from juice reserving water for later
- Place asparagus on hot dish
- In a separate pan melt butter
- Stir in flour to butter to make a roux
- Stir in milk to roux
- Add salt to taste
- Bring to a boil, stirring constantly
- Thin with water asparagus was cooked in

- Increase recipe to match amount of asparagus
- Serve with Lemon
