Ingredients

Ingredient Amount Notes
Tomatoes    
Eggplant   Optional - may substitute for Tomatoes
Flour    
Egg    
Milk    
Salt    
Olive Oil    
Salad Oil   Optional - May substitute for Olive Oil

Method

  1. Slice Tomatoes
  2. Sprinkle Tomato slices with flour
  3. Beat egg and add a little milk
  4. Dip tomato slices in egg mixture
  5. Remove tomatos from egg mixture and then salt
  6. Fry gently in deep hot Oil
  7. Turn only once to brown second side
  8. Lay on paper towel to drain
