Banana Nut Bread

Ingredients

| Butter | 3/4 cup | |
| Sugar | 1 1/2 cups | |
| Bananas | 3 | Mashed |
| Eggs | 2 | Beaten light |
| Vanilla | 1 tsp | |
| Flour | 2 cups | sifted |
| Baking Soda | 1 tsp | |
| Salt | 3/4 tsp | |
| Sour Cream | 1 cup | |
| Pecans | 3/4 cup | Chopped - May substitute pecan meal |
Method
- Preheat oven to 350F
- Cream together butter and sugar
- Mash bananas
- Beat eggs until light and fluffy
- Blend bananas, eggs, and vanilla into butter-sugar mix
- Add flour, baking soda, and salt
- Chop pecans if using nuts rather than meal
- Add pecans and sour cream alternating
- Grease bread pan well and flour
- Pour batter into pan
- Bake for 1 hour or more until done
Notes From Gran
- You may double the ingredient quantities and bake in 3 pans
- Excellent for freezing uif wrapped in foil
