Date and Nut Bread

Ingredients

| Dates | 1 cup | |
| Water | 1 1/2 cups | Boiling |
| Eggs | 2 | Beaten light |
| Sugar | 1 1/2 cups | |
| Flour | 2 1/4 cups + extra | Sifted |
| Baking Soda | 2 tsp | |
| Baking Powder | 1/4 tsp | |
| Salt | 1/2 tsp | |
| Butter | 2 Tbsp | Melted |
| Vanilla | 1 tsp | |
| Nuts | Floured and Chopped |
Method
- Prheat oven to 325F
- Cut up dates
- Boil 1 1/2 cups water and cover dates in boiling water
- Let dates soak for 10 minutes
- Beat eggs until light
- Add sugar to eggs and cream together
- Mix together sifted flour, baking sode, baking powder, and salt
- Add dry ingredients together alternating to egg mixture alternating with liquid from dates
- Melt butter and add to batter
- Add vanilla
- Fold in pieces of dates
- Chop and flour nuts and fold in
- Line pan with well greeased parchment paper (see modern notes)
- Bake 1 to 1 1/4 hours

Modern Notes
- The original recipe calls for lining the pan with “well greased heavy wax paper” but wax paper, even heavy wax paper is not oven safe. I transcribed as parchment paper since that serves the purpose and is actually intended for oven use
