Noodle + Beef Stuffed Tomato

Noodles | 4 cups | Recipe calls for Fine Noodles |
Ground Chuck | 1 lb | |
Onion | 1 med. | Chopped |
Mazola Oil | 2 Tbsp | For frying pan |
Tomatoes | 6 large | |
Basil | 1/2 tsp | |
Pepper | 1/4 tsp | |
Salt | To taste | |
Sherry | 2 Tbsp | Dry Sherry |
Method
- Preheat oven to 350 F
- Grease baking dish
- Cook noodles and drain
- Chop Onion
- Brown beef and onions in Mazola Oil
- Slice off tops of tomatoes
- Scoop out centers of tomatoes, leaving a 1/2 inch shell and preserving pulp
- Add to tomato pulp the noodles, basil, pepper and sherry
- Add salt to taste
- Combine beef and tomato mixture
- Fill Tomato shells
- Put remaining mixture in bottom of greased baking dish
- Put the stuffed tomatoes on top of the tomato mixture in the dish
- Bake for 30 minutes or until tomatoes are tender
